Basil-Mint Salad

Found in all green foods, chlorophyll packs a stong nutritional punch.  Chlorophyll has an identical molecular structure as Hemoglobin (the stuff found in the blood that carries oxygen to all of our cells) But instead of Oxygen, chlorophyll carries Magnesium to support our health.

Magnesium is a mineral that is essential to many biological processes:

  •  aids the body's absorption of calcium
  •  plays a key role in the strength and formation of bones and teeth
  •  helps stabilize the rhythm of the heart and helps prevent abnormal blood clotting in the heart.
  • aids in maintaining healthy blood pressure levels
  • significantly lowers the chance of heart attacks and strokes
  • helps maintain proper muscle function
  • relieves stiff muscles, and can be especially beneficial to fibromyalgia patients.
Magnesium consumed in the form of Chlorophyll has an added benefit.  As magnesium is released to do its work in the body, the molecule has the ability to sequester or chelate other heavy metals.  We are bombarded by heavy metal toxins on a daily basis and eating chlorophyll rich food helps to safely carry at least some of these toxins out of the body.
As a raw foodist, environmentalist, and health nut, I stumbled across this concoction by working with what I had on hand.  To my pleasant surprise the flavors worked and it is now one of my favorite salads.  If you're like me, you'll enjoy it and be able to reap the health benefits of a very Magnesium rich dish!
Basil-Mint Salad
3 parts Greens (arugula, romaine, spring mix)
1 part basil
1 part Spearmint
1 part Avocado
Tear greens into bit sized pieces, shred basil and spearmint, cube avocado.
Dressing:
1 part olive oil
1 part lemon/lime juice
Stalk of Celery
1T Brewed Soy Sauce
Peanut Sauce (to taste)
1 inch fresh ginger root
Food process until smooth.
Toss greens and Dressing.  Eat right away.
